全名 Steak, Guinness, and Cheese pie with a puff pastry lid ( 有夠長~吧 )
住在這裡常聽到一些很 " 家常 " 的菜名, 但機會非常少的可以吃到, 一是都是在 Pub 看到的菜名, 二是上一回是多久在 Pub 吃飯啊, 三是好吃的東西都很耗時... 最後, 因為最近很愛在廚房裡忙著, 所以書一借回來看到這個菜名, 就很迫不及待要做了
食譜是直接從網站抓下來的
serves 4 to 6, 非常耗時, 通常是前一日準備好內餡, 要吃當天加上派皮烤好就可以吃了
材料:
• olive oil
• 3 medium red onions, peeled and chopped
• 3 cloves of garlic, peeled and chopped
• 30g butter, plus extra for greasing
• 2 carrots, peeled and chopped
• 2 sticks of celery, trimmed and chopped
• 4 field mushrooms, peeled and sliced ( 我用一般的mushroom )
• 1kg brisket of beef or stewing beef, cut into 2cm cubes
• a few sprigs of fresh rosemary, leaves picked and chopped
• sea salt and freshly ground black pepper
• 1 x 440ml can of Guinness (no lager, please!)
• 2 heaped tablespoons plain flour
• 200g freshly grated Cheddar cheese
• 500g best-quality ready-made all-butter puff pastry
• 1 large free-range or organic egg, beaten

1.Preheat the oven to 190ºC/375ºF/gas 5. In a large ovenproof pan, heat a glug of olive oil on a low heat. Add the onions and fry gently for about 10 minutes – try not to colour them too much. Turn the heat up, add the garlic, butter, carrots and celery and scatter in the mushrooms. Mix everything together before stirring in the beef, rosemary, a pinch of salt and a level teaspoon of pepper.
2.Fry fast for 3 or 4 minutes, then pour in the Guinness, stir in the flour and add just enough water to cover. Bring to a simmer, cover the pan with a lid and place in the preheated oven for about 1½ hours. Remove the pan from the oven and give the stew a stir. Put it back into the oven and continue to cook it for another hour, or until the meat is very tender and the stew is rich, dark and thick. A perfect pie filling needs to be robust, so if it’s still quite liquidy, place the pan on the hob and reduce until the sauce thickens. Remove from the heat and stir in half the cheese, then season carefully and leave to cool slightly.
3.Cut about a third of the pastry off the block. Dust a clean work surface with flour and roll both pieces of pastry out evenly with a floured rolling pin to the thickness of a pound coin. Butter an appropriately sized pie dish, then line with the larger sheet, leaving the edges dangling over the side. Tip the stew into your lined dish and even it out before sprinkling over the remaining cheese. Brush the edges of the pastry with a little beaten egg.
4.Cut the other rolled sheet of pastry to fit the top of the pie dish and criss-cross it lightly with a sharp knife. Place it over the top of the pie and fold the overhanging pastry on to the pastry lid to make it look nice and rustic. Brush the top with beaten egg, then bake the pie directly on the bottom of the oven for 45 minutes, until the pastry is cooked, puffed and golden. Delicious served simply with peas.

我的烤盤都黑一圈了還不好吃嗎, 幸好家裡有洗碗機, 不然又要鬧離婚了; 這也解開我在 Pub 看到為何烤盤都是黑一圈; 因為在烤當中, 湯汁會流出來, 在烤箱長時間的烘烤下就呈焦黑的狀況了
搞了一整晚, 真的到隔天才吃到, 有等有差, 粉好吃捏

這是人家大師做的成果, 不是我做的
 出自康家廚房 29th April
因為我照出來的效果太糟了, 所以只好出示人家的照片, 不過真的很好吃啦
這位大師是 UKTVFood Tamasin Day-Lewis 
看到她的名字會不會有一些連想咧, 對啦, Daniel Day-Lewis 是她的弟弟, 長相也有點像呢, 你覺得嗎
她的廚房也是我的最愛之一, 尤其她有一個漂亮的 AGA 烤箱, 那是我的夢幻系列之一啊, 不過有一點我很受不了的是, 她有一頭自然捲的長髮, 做菜時她是不會犠牲將她的美髮做一番整理的, 所以就邊撥頭髮邊做菜, 怎麼說, 菜是他們要吃的無所謂, 而且人家一身漂亮的在做菜, 要你管啊
Serve: 6        prep: 35min   Cook: 1hr 40min
Ingredients:
for the meat
3 tbsp Olive oil   ( tbsp = tablespoon )
1 large Onions, chopped
2 sticks Celery, finely chopped
2 Carrots, diced
3 clove Garlic, finely chopped
675g minced beef or lamb
1 tbsp tomato puree
3-4 drops Worcestershire sauce 
3-4 drops Tabasco                             ( 沒加! 因為有幼兒一同食用 )
175ml dry white or Red wine               ( 用紹興酒代替, 用了三瓶蓋 )
300ml chicken or beef stock                ( 用 beef stock )
black pepper
for the topping 
1.4kg potatoes
50ml Milk
2 tbsp mature Cheddar cheese
1 tbsp finely grated Parmesan             ( 沒加! 因為有幼兒一同食用 )
Method
1.Pre-heat oven to 180C / Gas mark 4
2.Heat the oil in a large frying pan and add the onion, celery and carrot, stirring them over a brisk heat but not allowing them to brown
3.After 5 min or so add the garlic, reduce the heat and soften everything together
4.Invrease the heat again and add the mince, stirring until browned
5.Stir in the tomato puree, Worcestershire sauce, abasco, wine and stock, season and cover. Simmer for 10 min
6.Boil the potatoes until soft and mash them with the milk until smooth and creamy
7.Spoon the meat mixture into a gratin dish and cover with a thick, even layer of mashed potato
8.Sprinkle with cheese and bake for 45-55 min until golden and bubbling. Serve with seasonal vegetables.
這個手續稍微有點麻煩些, 但好吃才是重點啊, 我不怕辛苦的!! 現在做菜要考慮到小的, 所以儘量都是找可以全家共用的食譜, 不然當家的挑食, 我又不一定吃他的, 小的要注意調味料, 那不是很搞死我!!
目前都是儘量讓妹妹可以吃無限量種量的食物, 就是怕她會挑食啊, 她前幾週開始吃蛋乃滋, 她可以愛的咧, 所以我就又做了馬鈴薯蛋沙拉讓她當三明治點心, 這小妮子很會吃, 每次都是先吃沙拉的部份, 最後才吃麵包
這六人份被我們二天吃完, 真的是六人份喔

還是放上有朦朧美的成果照吧, 可以看出料多實在吧

食譜參考 Sainsbury - Jamie Oliver's 
這位年輕痞子廚師是我很欣賞的一位,材料簡單又好做喔,一定要試試
材料:
350g basics salmon fillets, baking potatoes x 4, lemon, round lettuce, cucumber ptn, 2xtomatoes, red onion (items from your store cupboard: 1 egg, salt and pepper, olive oil, mustard)

Serves 4
Prep time: 20 minutes
Cook time: 30 minutes
1. Place the salmon fillets in a metal colander over a pan of simmering water. Cover and steam for 5 minutes.
2. Peel the 4 potatoes, cut each into about 8 pieces and boil until soft. Mash and leave to cool. Remove any skin from the salmon, flake and mix with the potatoes, one lightly whisked egg, lemon zest and some salt and pepper. Roll the mixture into 8 fish cakes.
3. Drizzle olive oil on both sides of the fish cakes and cook on a baking tray in a preheated oven for 15 minutes at 200°C, fan 180°C, gas 6 or until crispy on the outside and heated through.
4. To prepare the salad, quarter the heart of the lettuce and set aside. Chop all the remaining washed salad ingredients, including the outer lettuce leaves, on a large board. Make a well in the middle and squeeze in the juice of the lemon. Add a dash of olive oil, a spoonful of Dijon mustard and salt and pepper, then mix through the salad. Serve the fish cakes with the salad and quartered lettuce heart.

馬鈴薯泥,這在歐美國家是很常見的一道菜,我比較喜歡有小塊狀,所以不會全部都弄碎
加入奶油後 ( 或拌玉米,或扮鮪魚罐頭,或加火腿.... 隨你開心 ),趁熱吃,也是一道很簡單的點心,馬鈴薯泥有很多種變化的呢

蒸好已去皮的魚肉;那個咖啡色的部份很討厭,吃起來苦苦的,我都會很細心的挑出來

準備放入烤箱的魚餅,表面的液體是橄欖油

灑上楜椒粉,一些塔塔醬,蔬菜沙拉就是一道簡單又方便的餐點喔
